Whether you prefer a classic chicken noodle, a hearty beef stew, or a creamy tomato bisque, soup can be both comforting and delicious. Do you have a favorite type of soup or a go-to recipe? If you’re looking for something new to try, may I suggest my favorite – Potato Leek Soup! Potato leek soup is indeed a classic! It’s creamy, comforting, and perfect for warming you up on a cold day.

Potato Leek Soup

4 large leeks, white and light green parts only, cleaned and sliced

4 medium potatoes, peeled and diced
1 medium onion, chopped
4 cups chicken or vegetable broth
1 cup heavy cream
2 Tbsp. butter
Salt and pepper to taste

In a large pot, melt the butter over medium heat. Add the leeks and onions, and sauté until they are soft and fragrant (about 10 minutes). Add the diced potatoes and broth. Bring to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the potatoes are tender. Use an immersion blender to purée the soup until smooth (or blend in batches in a regular blender). Stir in the heavy cream if using, and season with salt and pepper to taste. Serve hot with a sprinkle of chopped chives.
