Grilled corn on the cob feels like it was made for Memorial Day.  Sunny and simple, corn on the cob is meant to be shared. As the long weekend kicks off and the grill gets its first real workout of the season, ears of corn from Lake Tahoe Markets become little symbols of summer’s return. The moment they hit the heat, the air fills with that sweet-smoky aroma that drifts across the yard and pulls everyone a little closer.

Part of the charm is how effortless it is. Fresh corn, a hot grill, and a few minutes of patience are all you need. The flames coax out the natural sugars, caramelizing each kernel until it’s tender, juicy, and freckled with char.

And then comes the fun part of dressing it up. Maybe it’s a swipe of butter melting instantly into the ridges, a sprinkle of flaky salt, or a squeeze of lime. Maybe it’s brushed with chili oil, rolled in cotija, or dusted with smoked paprika. Grilled corn is generous as it welcomes whatever flavors you love.

But what makes it perfect for Memorial Day is the togetherness. It’s a food you eat with both hands, laughing, talking, brushing away a stray kernel while the grill sizzles in the background. It’s casual, communal, and celebratory — exactly the spirit of a holiday that brings friends and family outdoors to honor, remember, and enjoy the start of summer.

On Memorial Day, grilled corn isn’t just a side dish. It’s part of the moment.

Grilled Corn on the Cob

8 ears of corn, shucked

1 Tbsp. olive oil

6 Tbsp. butter

½ tsp. minced garlic

1½ tsp. fresh parsley, chopped

Salt and pepper, to taste

Preheat an outdoor grill or grill pan to medium heat. Brush the olive oil all over the corn. Place the corn on the grill. Cook for 2-3 minutes per side or until kernels are starting to brown, turning occasionally. The total cook time is about 8-10 minutes. Place the butter, garlic, parsley, thyme, salt and pepper in a bowl. Microwave in 30 second increments until butter is melted. Stir to combine. Brush the butter mixture over the grilled corn.

Serve immediately.
