When the heat settles in and the kitchen feels like the last place you want to be, the smartest move is to keep things simple. Summer cooking isn’t about effort; rather, it’s about ease, freshness, and letting the season do the heavy lifting. That’s why dishes like a quick cherry tomato pasta shine so brightly on hot days.
All you need are a handful of sweet cherry tomatoes, a little olive oil, garlic, and a pot of boiling water. The tomatoes collapse in minutes, turning into a warm, jammy sauce that tastes like pure sunshine. Toss in hot pasta, add a sprinkle of basil, and you’ve got a meal that feels bright and effortless without heating up the whole house.
These kinds of dishes are summer’s gift. With minimal prep, maximum flavor, and a reminder that good food doesn’t have to be complicated. When the days are long and the temperatures climb, light cooking keeps things cool and keeps you enjoying the best of the season.
Cherry Tomato Pasta
A vibrant and flavorful dish showcasing the natural sweetness of cherry tomatoes, perfect for a quick weeknight dinner.
8 oz. pasta (spaghetti or linguine)
1 pint cherry tomatoes
3 Tbsp. extra-virgin olive oil
4 cloves garlic, minced
1 tsp. red pepper flakes
Salt and pepper, to taste
¼ cup fresh basil leaves
¼ cup grated parmesan cheese
Begin by bringing a large pot of salted water to a boil. Once boiling, add the pasta and cook according to the package instructions until al dente, about 8 to 10 minutes. While the pasta cooks, heat the extra-virgin olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant. Add the cherry tomatoes and red pepper flakes (if using) to the skillet. Season with salt and black pepper. Cook for about 5 to 7 minutes, or until the tomatoes begin to burst. Once the pasta is cooked, reserve about 1/2 cup of the pasta cooking water, then drain the pasta in a colander. Add the drained pasta directly to the skillet with the cherry tomato sauce. Gently toss the pasta with the sauce, adding reserved pasta water a little at a time if needed to create a silky consistency. Remove the skillet from the heat and stir in the fresh basil. Adjust seasoning if necessary. Serve the pasta hot, garnished with additional basil and a sprinkle of Parmesan cheese if desired.
